Lactose-Free Carbonara

Ingredients

320g (11,3 oz) Barilla® Spaghetti No. 5
150g Bacon (cubes or sticks)
4 Egg Yolks
100g Lactose Free Pecorino or other aged sheep milk cheese (naturally lactose-free)
To taste Black Pepper
to taste Salt

Method

  • Step 1: In a mixing bowl, beat egg yolks with a pinch of salt and all the grated, naturally lactose-free cheese.
  • Step 2: Cook bacon cubes or sticks in a large skillet over medium heat. Go on until the fat has melted. Last but not least, fry it lightly.
  • Step 3: Cook spaghetti perfectly "al dente" in boiling salted water. Then drain them, and remember to set aside a little bit of cooking water.
  • Step 4: Pour pasta into the skillet together with the bacon and mix with care.
  • Step 5: Turn off the heat, add the egg mixture and the cooking water you previously set aside. Stir everything for just about 30 seconds.
  • Step 6: Gather your guests, serve and enjoy this lactose-free pasta carbonara all together!
