60g | black fish eggs |
16 | watercress leaves |
40 ml | Extra virgin olive oil (EVOO) |

Method
- Step 1: Peel and cut the mango and oranges into pieces. Wash and quarter the tomatoes.
- Step 2: Blend with a drizzle of olive oil, salt, and pepper, then strain it to obtain a smooth mixture.
- Step 3: Cook the pasta in boiling salted water until "al dente".
- Step 4: Once the pasta is cooked, drain it in a bowl and add a drizzle of olive oil.
- Step 5: Season the pasta, plate and garnish with fish eggs and watercress leaves.
